Best way to enjoy mussels in Shetland? Can't see how this recipe can be beaten...
1. Walk down to shoreline, speak to the fisherman bringing in the mussel ropes.
2. Get a bags worth, take back to kitchen
3. Put some olive oil & white wine in a large pan, heat.
4. Rinse then add in the mussels.
5. Add more wine, olive oil plus some parsley.
6. Heat for about 7 minutes.
7. Serve immediately, with rest of wine.
